The argument for bark is that it smolders really well, providing more smoke during the cook and therefore more smokey flavor. Think about it: When you put a log on the fire, the bark almost immediately begins to smoke and smolder. And therein lies the second half of the pro-bark argument: when cooking on an offset you use logs with bark, so why should pellets be any different?

Manufacturers advertise this piece of equipment as both a smoker and a grill, but it's best to think of it as a superb indirect-heat convection smoker, not a grill. Most models just don't do as good a job of searing a steak as a charcoal grill or even a gas grill with a sear burner can. You'll sear steaks better on a $20 hibachi than on most pellet smokers.
The Yoder YS640 is 32 inches wide, weighs 313 pounds, and is said to have a cooking range of 150 to 600°F (65 to 315°C). Yoder is known for heavy-duty competition smokers, and the thick, 10-gauge-steel cooking chamber on this model is durable and great for heat retention. It comes with a sophisticated proprietary digital controller, which Yoder asserts is not based on any off-the-shelf temperature controller of any sort. Yoder states that it designed the board from scratch around a general-purpose micro-controller chip and wrote its own code from the ground up in an attempt to provide superior flexibility, efficiency, and accuracy.
Thanks Kevin for the reviews and content. Like many of the folks I too will be purchasing a pellet pooper. I have narrowed my choices to a MAK 2 star and a Memphis Elite. One of the earlier posters indicated on the Memphis that the effective direct grilling space was about 1 square foot. I am assuming that with the smaller footprint of the MAK that the direct “flame zone” is less than that. I’m just wondering how much less.
Igniter: An igniting rod, heated up to a red hot level, ignites wood pellets as they fall inside the firebox. A cooling fan blows air into the pellet smoker from behind the pellet auger to prevent heat backdraft, while the fan underneath the firebox fans the flame – distributing heat evenly throughout the smoker. This heat is used to smoke and slow cook food in the smoker to give it the best flavors possible.
There are no food probes with this controller as there are on the MAK Pellet Boss, and the controller is mounted to the surface with two screws and no gasket so I fear rain could get into the electronics, but after more than a year of sitting out without the cover in rain and snow, the controller on the IPT I tested is still working fine. Ortech recommends covering your smoker.
Hey Ben! Cool re: your Camp Chef! Pellet smokers produce a light smoke as compared to stick burners, gravity fed smokers, Ugly Drum Smokers, etc. Most feel that the smoke provided is enough. If you're in the store, lift the lid and feel its weight—is it flimsy or made from a heavier gauge steel? Pellet grills aren't like offset smokers, they don't need to be hefty, but they shouldn't feel delicate either. When you close the lid, see how it lays on the grill—are there gaps or is it flush, providing a good seal? Check out the joints, the hardware, and any welding—does the grill feel solid? It should be sturdy and all the joints and seams should fit together snugly, no gaps or spaces for heat to escape.
I bought my second Traeger Grill around Thanksgiving (my last one died after 3 months), spent most of the day assembling it only to find it didn't work. Customer service told me to reset the thermostat, I did and it shut down. I did this routine a few more times with customer service and it kept shutting down, day after day. Traeger reluctantly sent me a replacement grill and promised it would be Fully assembled (I have little use of my left hand and can't work with small parts) Well it showed up unassembled in a bunch of little boxes. Customer service told me 4 times that they would call back with a local Traeger dealer to assemble it. Four promises to have someone come out and not even a phone call.
The Ortech has two knobs. The large one, the "Cook Control" has settings for: Off, Smoke, 180, 225, 250, 275, 300, 325, 350, 375, and High. One smoker manufacturer says that the "Smoke" setting is about 160°F and "high" is about 525°F, but both can vary due to ambient temperature, humidity, fuel type and quality of the smoker. Another knob, a teensy weensy knob to the right of the LED screen looks more like a push button. Labeled "SMOKE" and called the "Smoke Control Knob", it is meant to turn, not push, and it controls the pellet feed rate with auger on/off sequences indicated by "P settings". The P settings range from P0 to P15.

I live in Florida (Ocala), and I would like to grill, but I am undecided what to buy. I would not use the grill everyday. I am not a ‘griller’, but I do enjoy grilling simple meats, hamburgers, pork tenderloin and chicken; perhaps smoking a 12 lb. turkey for Thanksgiving and Christmas. I have no knowledge as to grill veggies or fish. I am an ignoramus! I tried, but I couldn’t detect them among the ashes!
Ordered Renegade Pro, received it and missing 6 washers to assemble the legs. They are rattling around inside the unit making it unusable. The control knob also sheared off in shipping. Traeger has yet to come up with a solution to fix or replace the unit...disappointed in their customer service. They don't care about customers after they get their money.
Hey DW – I think it’s a good call either way. Reports from users re: customer service are tops for both Rec-Tec Pellet Grills and GMG Pellet Grills. GMG offers a wifi option that now runs on your home network, and will eventually allow you to monitor via a cloud option, meaning monitoring your grill as you are out shopping etc. The extra large hopper size on the Rec-Tec Pellet Grills could be a bonus for you if you plan on doing some really long cooks. Other than that I really think it comes down to things as simple as how the unit looks. I know that sounds silly, but they are both great grills otherwise. So, what’s your gut tell you?
Hey Kim – thank you for this. I’ve had this happen with numerous pellet smokers, including GMGs. What happens most often when it happens is that I’ve been remiss in properly cleaning the grill out after several uses (vacuuming the fire pot out). This causes the ash etc to cover up the heating rod, thus making the temperature lower than expected. The auger keeps feeding the fire pot to compensate and you get what you’ve described.

I've been BBQing and pit smoking for many years. About 4 yrs ago I tried out pellet grilling with an import brand, and had to rebuild and replace parts for 3 yrs until it was no longer worth it! After about 10-15 hours of cooking, you should remove the burn cup and dump the ash. If the ash builds up it can prevent ignition. Ash also accumulates in the bottom of the unit, but doesn't impact cooking. A vacuum cleaner with a hose makes short work of it. Only a few manufacturers, such as Blaz'n Grill Works and Camp Chef have a slide out combustion cup that makes cleanup much easier, but you still have to get underneath the deflector occasionally and suck out fly ash that has scattered around the lower part of the grill body.
Am considering adding a pellet grill to my fleet, have champagne taste on a beer budget. Have a smoke hollow smoker (lp) that works awesome, a cheap charbroil gril, and a holland I picked up used. Tried the holland because I got tired of flareups but it is slow, a coffee can over the stacks until it warms up helps but you don’t want to walk away from it that way. I like the idea of something you don’t have to baby sit. Any reviews on the traeger grills? I like the looks of the traeger jr, has nice features, portable and enough room for most of the things I want. Also are these grills affected by wind and do they work in cold weather? I live in ND and like to use them in the winter as long as the temp is above 10 degrees or so.
I also was a certified KCBS judge but never judged at an event. Their judging system was flawed in my opinion because if you truly follow their system it is possible that them best tasting piece of meat might not win. In cutting horses (not a judge but read all the rules as I showed a fair amount back then) you were always supposed to judge the best overall horse to win. I asked about leaving a process to make sure the piece of meat you feel is best to win and was told absolutely not you have to judge presentation points, tender points & etc. and not place based on your opinion of the best piece of meat! Not that KCBS is a bad organization, it’s rules didn’t fit my thought process. Passed their class and got the t-shirt just never agreed, was always a spectator.
There are other options, KBQ for one, but I want it to look like a grill. Not a refrigerator, although I’m sure they make great Q I have narrowed my search to Pellet poopers or the Primo or Egg. The Pellet poopers will have more capacity than even the XL Primo/Egg. But are they one trick ponies? Smoking and baking. WIth limited smoke profile. I wish I could taste the Que off of one to know for sure. I got rid of my gasser because of the limited flavor it produced. Rec-Tec’s tag line is Do you cook with wood. But does it produce enough smoke flavor for most people? How do your neighbors respond to your Que? Do they like the smoke profile of the Que? Sorry for all the questions. Just trying to figure out what the next smoker will be at Mi Casa.
Not all people and culture will be able to truly understand our love for barbecue here in the USA. For them, it might just be a cooking activity while for us, it’s a tradition – a ritual to celebrate the summers (and occasionally the winters). As long as this love for grilling stays with us, which will be, we’re going to continue to expect more and more from the grill manufacturers.

WOW, that’s all I got. What an amazing piece of cooking equipment. I’ve owned mine now for a little over a year, and to be honest, each time I use it, I learn something new about it. I’ve cooked on Traeger’s and owned several Bradley smokers. But nothing compares to the versatility of the Yoder. This thing is well made (its heavy) and it cooks flawlessly. The worst thing about it is the need to empty the ashes, and it’s not that big of a deal. I will say, invest the money and buy the heat diffuser with the access door. It makes removing the ashes so much easier. Ask yourself this question, how many different flavors of propane can you use on your grill. Because with all of the different wood options for this, it’s almost limitless. Make the investment, you won’t be sorry
