Pellet grills have electronic temperature controls that (should) keep the heat consistent. Top quality pellet grills can maintain temperatures within 5 degrees or less for hours at a time, with the auger releasing pellets as needed into the fire box to do so. A consistent temperature means less guess work and fantastic food! (If you read words like “heat zones” or “baffle”, that means that you’ll need to be playing with the heat to keep it consistent… so steer clear of those!)
To solve this problem, several companies have come up with alternative ways to expose food to the flame by allowing you to use the small area directly above the fuel pot. It's still not as good as a charcoal or sear burner, but better than the designs that are strictly indirect. Check out the Memphis Elite, Fast Eddy's by Cookshack PG500, and the Yoder YS640 for this feature. Camp Chef also recently introduced its Woodwind pellet smoker, which has a super-hot gas-fueled sear box attached to the right side.

Kevin- I’m in the process of researching to get my husband a grill for Christmas. I’m torn between the 820 you mentioned above and the Traeger Pro Series. As far as I can tell they are basically the same except that you get a larger cooking area on the pit boss for the same price you pay for a small cook space in a traeger. I would like to spend around $600 on the grill but would possibly go up to $800 and want 500 sq in cook space or greater. Which do you prefer? Pit Boss, Traeger or another brand?

I have ate a few peoples cooking that have won at the Royal, Houston and Memphis in May. They have all had one thing in common, I didn’t put one drop of sauce on them and they had not been sauced on the Q before serving! I have tasted all his sauces and they are very good, but the 3 times I have been there, his sauces never touch my ribs and brisket! None of the KCBS, Houston or Memphis in may winners Q had even a hint of ash or bitter smoke flavor. They also had a very light smoke profile. They also all say they cook over well burned down wood.

Manufacturers advertise this piece of equipment as both a smoker and a grill, but it's best to think of it as a superb indirect-heat convection smoker, not a grill. Most models just don't do as good a job of searing a steak as a charcoal grill or even a gas grill with a sear burner can. You'll sear steaks better on a $20 hibachi than on most pellet smokers.

Hey Eric! Man, thank you for the kind words. While I don’t post every day, I do try to make what I share with you guys as informative as possible. To that end, your words mean a lot. Now, the pellet release option is a great feature to have on any pellet smoker. In cases where you don’t have one, I suggest using a small shop vac you use just for pellet removal. Works great. But the quick release chute option saves a ton of time and effort for sure. Not what I’d call a deal breaker if a pellet smoker you like doesn’t have one. However, I’d like to see it become standard on pellet smokers for sure!

Hey Brad, you’ve got 3 great grills there. Rec Tec has the edge on Pellet quantity. I like the build quality and support on the Grilla a bit better, especially with the extra insulation and updated comp wheel set up. Figure 10 min or so to get to top temps. Just remember to drop to around 300 F temp setting before going into the shut down cycle on any pellet grill if you’re cranking it up to the highest setting.

I've been using a pellet grill for a LONG time (Traeger for ~15 years?), so I know an upgrade when I see it. I just picked up a YS640, and it's amazing. I love removing the diffuser, adding the Grill Grates, and doing so nice searing! My first cook was a batch of rid eyes, and they were both beautiful as well as delicious. My "guest list" of people wbo want to come over for food keeps growing... Nice problem to have. Good friends, good food, good times.


DS, I have a green mountain grill. besides that for any pellet smoker cook your chicken at a high heat otherwise the skin will be rubbery. doesnt have to be a direct flame to get it crispy. I set my GMG to 425 flip it after 8 mins pull it at 170 crispy perfection. if you want more smoke flavor, smoke it at 150 for an hour then crank it up to 425 to finish it. I was upset with my rubbery skin when i first used it as well but i got some good advice from the pros. chicken doesnt need to be cooked low and slow to tenderize it like pork and beef does. it doesnt have the tissues or muscles that need to be broken down like beef and pork

Is it food quality? All of my foods are the best I have ever grilled. The ribs are nearly falling off of the bone, yet still moist! In the past, if I tried to get them to that point, they would have been very dry. All of my meats have been moist with a lightly smoked flavor. My breads perfectly crusted on the outside, moist inside with a perfect crust!


Depending on size, the Traeger grill is very easy to store. However, the camp chef is usually the most portable with ease of transport and storage while the big green egg grill has a weird egg shape but a bit compact depending on size. Therefore, depending on your size, you can easily store any of these grills in as little space as you want. Besides, most have wheels for easier movability. As for cleaning, the Traeger grill is easier to clean and maintain, when compared to the other two grills.

Hey Kim – thank you for this. I’ve had this happen with numerous pellet smokers, including GMGs. What happens most often when it happens is that I’ve been remiss in properly cleaning the grill out after several uses (vacuuming the fire pot out). This causes the ash etc to cover up the heating rod, thus making the temperature lower than expected. The auger keeps feeding the fire pot to compensate and you get what you’ve described.
Now, there are different materials that certain pellet grills are made from. Since steel is such a heavy duty and heavy item, some brands have opted in for more cost-efficient materials, such as a stainless-steel lid to remove some of the weight from the pellet grill. With that said, the interior grill gates are as equally important as the exterior. For example, some grill gates are made from an easy to clean porcelain material while some are designed from stainless steel to be more user-friendly and cost-effective. With that said, let’s discuss another important element to consider when it comes to a pellet grill.
I was able to put this to use for the first time this past weekend. It was awesome! Worked exactly as expected. Very easy to cook on and clean. I see us breaking this out on every camping trip. Just a bit of warning though...our first meal on the griddle side was scrambled eggs (which cooked up super fast) and we forgot to make sure the stove itself was level and the eggs almost slid over the not so tall edge. Once the stove legs were leveled, everything was perfect.
Larger, more expensive smokers run anywhere up to 900 square inches, which will basically let you feed your whole street. It’s also a whole lot more convenient when you’re planning on cooking multiple things to be able to throw every single sausage, joint of meat and rack of ribs on at once, flip ’em around and move things to the edge when they’re done.

Hey Corry – GMG and Traeger have shown that they support their brands very well of late. In many cases, they both provide parts support even when warranty limits run out. If you’re considering a Traeger, I’d urge you to go with their Pro Series 22 or 34. Sounds like that’s what you’re probably looking at where they are concerned if you’re looking at a dealer.
The digital controller has a temperature dial (180 F to 400 F), shutdown cycle setting and an on/off switch which is very basic. Compared to the Camp Chef, it misses out on bypass startup button, food probe, feed button, lo smoke/high smoke settings and most importantly access to the fuse. In order to change the fuse in the Traeger, you’ll have to remove both screws on the digital controller and pull out the controller.
The hook rack works great and is a must. The Towel holder works ok but does not work well if there a some wind blowing by. Wants to unroll the towel just enough to make it a possible fire hazard by the gind unwinding the towel rool enought that it can flip up over the wind gaurd and get in the flames. I have to remove it from the camp stove if there is any wind to avoid this problem.

I have several smokers I have used over the years. I have dialed in everyone I own over a course of trial and error. They all get great results, but require me to tend them all throughout the cook. I wanted a smoker that I could easily get to the desired temp, maintain the temp, provide good smoke flavor, and have the size to do a small or large cook, and not need me to be tending it throughout the cook. The learning curve on this smoker is super easy if you know all your temps, your first cook will give you the results your looking for. I was a little worried that I was not going to get the smoke flavor with a pellet smoker, but my brisket turned out amazing, very tender, the smoke ring was perfect. When I was searching for a new smoker I was a little shy of the Yoder based on the price, but when you figure in the ability to grill as well this became a better alternative. The quality is top tier, this is built to last a long time. I'm so glad I went with the Yoder YS640 no regrets.

However, the quality of that steel and the paint can vary. A good high-temp powder coat paint can stand up to high heat without blistering or flaking. The fire pot and diffuser plate have the potential to corrode and are two of the most common parts that need replacing. After owning this grill for six months I can honestly say I don't regret my purchase. I was waiting for low temp weather to really test this grill and i must be honest i was very surprised. I grilled 400 degrees with the outside temp at 38 degrees and the grill came up to temp within 20 minutes. Last night I started a brisket in 31 degree weather cooking at 225. No problem at all, and I haven't use a thermal jacket. We have done every thing from low and slow to baking and just have been amazed at outcome. Got a couple of more tests that i want to do, but six months, it's great. Stop thinking about it, stop worrying about the price, and prepare to make some great wood fire food.

Finally deciding to go with the Camp Chef I haven't been disappointed. The temperature control is flawless so you can dial down the cooking process. I smoked chicken the other day and the red smoke ring was a 1/2" deep. It works like a convection oven so there are no cool or hot zones, it just keeps the heat even and consistent. I have noticed even if smoke isn't pouring out the wood flavors are present.

It offers 700 sq. in. of cooking space and a powerful thermostat for a higher price, but makes up for it as soon as you start cooking on it. Also, it has a stunning design with the bull horns, which sets it apart yet again. But if you find yourself not spending as much and could do with a lesser cooking space, then the Camp Chef PG24 is a no-brainer for you.

WOW, that’s all I got. What an amazing piece of cooking equipment. I’ve owned mine now for a little over a year, and to be honest, each time I use it, I learn something new about it. I’ve cooked on Traeger’s and owned several Bradley smokers. But nothing compares to the versatility of the Yoder. This thing is well made (its heavy) and it cooks flawlessly. The worst thing about it is the need to empty the ashes, and it’s not that big of a deal. I will say, invest the money and buy the heat diffuser with the access door. It makes removing the ashes so much easier. Ask yourself this question, how many different flavors of propane can you use on your grill. Because with all of the different wood options for this, it’s almost limitless. Make the investment, you won’t be sorry
I've had it for right at a year as of the time of this review, and I absolutely LOVE IT. Normally I am of the opinion that you should overspend to get the better product, but I am 100% satisfied with the SE. I've gone through almost 200# of pellets in a year and I've successfully smoked three briskets, pork in various forms, a bunch of whole chickens, salmon, and probably some other thing I'm not thinking of. The show-stopped for me is bacon-wrapped dove breasts. I smoke them for an hour and then finish them on my grill. They are out-of-this-world amazing.
We ended up going with the Memphis Pro. We were fortunate enough to be able to see all of the manufacturers and models I was most interested in, at Sam’s NW BBQ. (Yoder, MAK, Fast Eddy, GMG’s, a few others, and then, the one we ended up with, Memphis.) Sam took a good amount of time, providing us fantastic information about each model. We ended up with the Memphis Pro for the following reasons: 1) The construction, mainly the double-walled construction; 2) the preciseness of temperature, and being able to hold the temperature (due to reason #1); 3) the extreme ease of changing from smoking to grilling without a lot of effort or reconfiguration; 4) the double hoppers; 5) and another BIGGIE, the fact that grilled or baked foods taste like that, and not like smoked cookies, bread, pizza, etc.
