Another pellet smoker from industry leaders Traeger. The Lil Tex Elite is an upscaled Junior Elite, and whilst it’s still a good quality smoker and grill with a powerful burner and excellent heat output, plus all of Traeger’s usual electronic gizmos. JUNK!!!!! Major defects and powder coating coming off and possibly getting my family sick. Very rude customer service telling me to just take it back to Costco! Did I mention I bought the biggest one and will need to disassemble the entire thing to fit it in my explorer! I will be sending the paint chips that came off to a lab to determine what the stuff is and if my family has been exposed to carcinogenic chemicals. From the second I ordered the YS640 to the day it arrived the service and dialogue with ATBBQ was first rate. They actually care about the customers service experience! Now, jump ahead to my actually trying to get my Traeger replaced.  Per the email, I called Traeger customer service expecting the same service I received right after Christmas.  NOPE!    I spoke with Frank (Carson) I believe.  He did everything from accuse me of shutting my grill off and turning it back on incorrectly (impossible since I was in the house) to not cleaning my grill.   Neither of which were correct.    He basically made me feel like my grill was unsafe!  His attitude was HORRIBLE!  He was rude and condescending.   A nightmare to work with!
This will work using one burner only on the stove when connected to our RV exterior grill connection port. Our camp chef portable stove has one large and one standard burner. It would only operate on the standard burner due to the low pressure regulated on the RV piping system. Be prepared to break out the standard propane tank & regulator hose set if you plan on running a two or three burner camp chef stove. Rating is 4 stars due to the price and short length at $35 price tag, it could have been longer.

With the traeger, rec-tec or cam chef smokers all seem to burn 1-2lbs per hour. But for a long 18hr brisket it seems like I will have to continue to use pellets the whole time to keep the heat in range over over 200 which will mean I am using almost a 20-40lb bag depending on the time year per smoke. This is even more expensive than the bradley seems even with the wasted briquette. IS this correct or is there something I am missing?

I brought my YS640 to Mexico on a friends recommendation, he was right. I takes the complexity of smoking away but this is not the reason why I got it. We live in south of the Sonoran desert and we are over the 100F most of the year, its almost impossible to stay close to your smoker to watch the fire and temperature. Plus, wood is not as easy to get in the desert. Since I got it, I have been selling food on Sundays, I was sold out since day one. Flawless food time after time. I am planning to get the old time offset cooker to smoke in the winter just for fun. There is really no need for it.

The controls are also fully programmable, so you could for example set it to smoke for 5 hours and then cook for 2, finishing just as you pull up onto your drive.
PID: For the most precise temperature control, some pitmasters feel that a grill with a proportional-integrative-derivative (PID) controller is the way to go. A PID controller uses algorithms to keep the temperature within a couple of degrees of the setting. It doesn’t use fixed cycles to release the pellets. Instead, the controller only adds pellets when it’s necessary to maintain the desired temperature.
Number two when cooking with charcoal (yes plain Kingsford is good stuff if you do it right, a lot of the cheaper brick and cheaper lump can put some weird twangs in your food) brick or lump can produce quality high temp steaks or slow & low bbq! To add some nice flavor add some wood, but do your homework! I think Clark ‘Smokey’ Hale has one of the best books ever for the grill and Q master, “The Great American Manual on Grilling and BBQ or something like that. Last I saw you can grab a used one on Amazon for a few cents and some shipping. The most prolific thing I read in there that so many miss, is burn your wood and your charcoal to where it is literally a coal of gray ash covered glowing ember. Do that and you will find a new flavor in your cooking! Problem is so many places think heavy smoke is great, as they are trying to imitate cold smoke flavors! They are not the same! All this talk I see here about, “I want heavy smoke flavor.” I can tell you if you burn your wood and your charcoal (and I feel even lump needs to be well on it’s way to gray ash covered or you get bitter smoke even though many say not necessary) to a red ember with gray ash covering 80 to 90% minimum preferably completely covered your flavor profile will change. Many supposedly good bbq restaurants I have been in serve something with a bitter or ash flavor, which I find much less enjoyable.
Do not confuse a pellet grill for gas grills. Like the name suggests, a pellet grill obviously uses pellets for cooking its food. But do not doubt its competence with any other gas or convection appliances. It cooks just as well, if not better. And the secret to this are in its pellets. They can be found as a separate device attached to the grills if you’re handy enough, but all the manufacturers aren’t fully considering them yet. Using a PID controller, you can accurately maintain the temperature while cooking and ensure that the food is cooked automatically to perfection without much supervision.

I don’t know why these cookers are referred to as grills. By definition they are not grills. Grilling involves cooking with direct heat and none of the pellet cookers I’ve seen use direct heat; they all use indirect heat. They are more accurately described as smokers/convection ovens. For me what this means is they’re useless for cooking chicken since I like my chicken cooked with crispy/burned skin. I’ve done some experimenting to get the skin to crisp up but always end up with leather skin. They have their place in outdoor cooking but grilling ain’t it. I just bought a Green Mountain and I’m still debating if I’m going to hang on to it. Shame on me for not doing more thorough research first.
